Avocado Sushi Boats: Paired with Koelenhof Sauvignon Blanc Vin-Sec

This delightful sparkling wine is a little sweeter than one might expect from a Sauvignon Blanc - a pleasant surprise upon that first sip!

The Koelenhof Vin-Sec pairs well with sushi, but sushi can be a complicated dish to prepare at home, so I bring you these Avocado Sushi Boats. All of the flavours, none of the complications.

HERE’S WHAT YOU NEED:

  • 1 Cup Sushi rice, cooked
  • 250g Salmon / Trout 
  • 2 Tbsp Soy
  • 2 Tbsp Rice vinegar
  • 1 Tbsp Sriracha
  • 5 Avocados
  • Kewpie Mayonnaise
  • Sesame seeds
  • 1 Sheet Nori
  • Spring onion
  • Pickled ginger

HERE’S WHAT YOU’LL DO:

  1. Cook sushi rice according to package instructions and let cool. I like to season mine with some rice vinegar and sugar. 
  2. Cut the fish into small bite sized pieces, then add the Soy, Rice vinegar and Sriracha sauce to the fish. Combine well and set aside. 
  3. Cut the avocados in half, lengthwise. Remove the pit, then use a tablespoon to scoop out some of the avo, creating a little bowl. 
  4. Do not discard what you’ve scooped out - use it in a salad or to make guacamole. 
  5. Now add some sushi rice to the little bowl you’ve created, then top with the marinated Salmon. 
  6. Finish off with a drizzle of Kewpie mayo, toasted sesame seeds, Nori (seaweed) and spring onion. Serve with pickled ginger on the side.
